how does a haltech or any other stand-alone work? What sensors do they use?

what do you mean how does it work? You input ignition and fuel maps that play by each 1-2-3 bar map senor, whichever you have. It uses an air intake temp, water temp sensor, Tps and stock(or aftmarket) CAS, but they are many extra you can get and there is a long list of **** it can control, ie: e-fans,nitro,turbo fans,TT,X-tra fuel pumps, etc etc. But whats nice is it uses a map senor instead of a afm and map(pressure) senor in conjuction, and you easily tune for best hp safely, and ofcourse control huge injectors.

The stocker ECU can't handle a big turbo can it?

well it can't really control bigger injectors which are needed with a bigger turbo, even with a s-afc, its hard to get the transition just right, all it takes is one time, BOOM!
