It is almost impossible to do a single turbo setup on a V8. Think about it the turbo would have to be exactly the same length away from all cylinders. So either the turbo would sit behind the engine, under the engine, or in front of the engine. With a twin turbo setup on a V8 it is usually two turbos of the same size.
V-6, v-8 same thing with what your talking about, plenty of single turbo V-6 and V-8s right from the factory, Grand Nationals had them, Anniversary edition Trans ams had them in 1980, and in 1988, GMS Syclone/ Typhoon ( although its the same engine as the GN ) Here is a pic of the 1980 Pontiac 301 Turbo:
