So where to go for this years anniversary

Belize has a trade agreement with the US and all currency is a set rate at 2bz:1usd. When you compare belize to other latin countries is pretty expensive (assuming youre out of the super tourist zones). Still, I was able to live there for a month for about 500usd and do cool stuff every single day. Including chartering boats, chartering a small tour group to drive and hike deep into the jungles to go cave spelunkering, buying food, pretty nice (for their standards) hotel rooms, etc, etc... All together with airfare I dropped about 1000 dollars or so over a month in just belize. Not bad for what you get.

I know it wasn't on your list phins, but my wife and I spent our honeymoon Oct 2004 in Antigua and it had to have been the most relaxing place I've ever been. Stayed at a resort called Cocobay on the western side of the island. link: http://www.cocobayresort.com/ It was a quiet, small resort that was away from pretty much everything, yet close enough to get to anything you wanted. Would highly recommend it.
Antigua in general was great... much better overall feel that Jamaica or somewhere like Aruba.
and if the anniv trip doesn't work out, you can always join my buddies and I on our 10 day "binge drinking extravaganza" in the Philippines this March
