Can there be too much tire ?

Question Can there be too much tire ?

Hello ! I'm new to the forum and I own a 1999 Type RB RX7.

After a lot of research I see that most people go to 255/35 or 255/40 on 18 or 17 inch. Currently I'm running the OEM staggered setup of 255/40 and 235/40 on 17inch.

I am wondering, moving up to 255 or even 265 may be a good idea for track or autox but what about spirited street driving? Is it just too much tire/grip?
Power levels around 300-320whp

I've seen other setups using just a 225 tire and wonder what's reasoning behind tire width choice for the street. All I came up with so far with setups is that people go with what looks nice or stance the car and so on but I prefer function...
