I don't have rx-7 and I would love the 2nd gen but how well does it go on ice and snow and does it start in -20 degrees celsius, and that kind of things... cars are kind of expensive in finland and it would be my only car...

It should start up fine, as long as the electrical system is working well. The car should be ok in light snow with good all season tires. Snow tires would be a better bet if you get heavy snow.

also remember the ground clearance. I don't drive my 7 in the winter becuz there is no traction what so ever, and i would spin out and get stuck daily. I don;t know how snow tires would work though. I have toyo proxes and they're performance tires. Plus i don't want rust and i don't want to risk getting hit. It starts below temps, but i let it warm up, becuz all the fluids are like frozen and i can't shift and my powersteering don't work until it warms up.

RX-7's handle fine with all season or snow tires. They have close to a 50/50 balance. They'll clear a decent amount of snow if they're stock.

Question

I had a Subaru that would get stuck in the snow after I lowered it

The RX-7 is probably a bit too low to be a good winter car, even with snow tires.

You could try using a front spoiler as a snow plow.
