I had fun gutting my car too. The weight of some of the parts is shocking. If you can't find the fastener holding something in, just rip it out, or use a sawz-all.

What are the plans for the car? Racing only, or will it still be street driven?

But you're still taking out the dash? What about the carpet and such? If it were race only you have to make fewer sacrifices for comfort.
