I'm not sure which is better. That's an apples to oranges question. The GT-R is a brute that can handle well. The Evo series is extremely quick and it's handling is f'n spectacular. Different horses for different courses.
I'd go with a Evo. After riding shotgun in an Evo6 for a night last year in Japan, I fell in love with it's grip. This thing had a bone stock engine but had everything under the sun for suspension. It was damn quick off the line (at the expense of a bit of clutch). This thing stayed as flat as a tabletop going around curves on a hilly road at 2x~3x the speed limit.
Built up GT-R's are fun to ride in, but I prefer handling over power these days. Plus they feel like the big cars that they are. The Evo's feel much lighter and nimble.
