If you've got pictures of the boat beforehand in the same spots where damage was pictured (especially if there's a way to prove the date) I know it would help. However, starting a lawsuit from an internet claim is (from what I've seen) near damn impossible, so unless they call you up and approach in person, you don't have much to worry about. However, you suing them for a crappy job is very feasible.

But in all honesty, everything on the internet is hard to prove in court, especially since i think courts still cant dictate the actual material on the internet.....yet.

So how exactly were his threats made? Was it a "I'm going to get a lawyer and sue you for libel/slander!" or was it a call made from a law office where you spoke to a lawyer?
I said look man if you keep calling me and threatening me and hollering on my voicemail I am going to have to hire a lawyer which I am really not in the mood to do as I just want to put this behind me.
He told me he was going to sue me for liable due to the things I posted on the forum, I asked him what I posted that wasnt true and he just flew off the handle.

Oh, in that case, I really wouldn't worry about it. 1. It was on the internet, 2. Everything that was said is true (and I believe you have witnesses to attest to it,) 3. He hasn't already sought out a lawyer. If you do get a call from a lawyer, it would have to be a Lionel Hutz type to even take the case.
