What about cooling with it in the rear? Where to mount the radiator and oil cooler?

Well that's for you to figure out. I'll give you a helpful hint and say only a water cooled Baja can get away with a radiator in the back since they usually have an exposed engine and some degree of airflow back there. All other VWs with water cooled engines need a radiator up front. That Manx-like thing you've got there is a bit of a grey area.
