Well, in light of my recent aquirement of me-time, I've started cooking a lot. Some of my favs are manacotti, shrimp scampi and last nights creation - pan blackened mahi mahi tacos.

What are some of your favorite dishes to cook? I'm looking for some fresh ideas with fresh foods.

I don't really cook, but I've recently acquired a taste for mediterranean dishes with artichoke and sun-dried tomatos. Incorporate it into a grilled chicken dish, mmm mmm bitch.

Rum Cake, Scampi, chicken enchiladas, roasted peppers with whatever noodle and meat happen to be around, black pepper crusted steak with carmalized onions.



I don't cook terribly often but when I do...



I tend to like spicy food as well.

Its really easy, but I love to take squash and zuccini, cut it in half length ways, put olive oil on it and with whatever seasonings you like. Then put it on the grill. They are scrumptous!
