wtf now, water pump?

ok, so for those of you who know, i replaced my water pump cause it was corroded and not moving any coolant. bam, replaced, worked fine, except i forgot the water pump gasket..oops, little leakage (but it ran fine and didn't overheat after like 10-15min of running). okay, that's fine...pull everything, install gasket, putting omp banjo bolts in...BREAK, twisted the top off one of the bolts. dammit, okay, ordered new bolts, they came in today.
i put them on, put in as much coolant as i could before it filled (since the car was off the t-stat was closed cause of ambient temp). started the car, waited....waited...see a bubble or two, then it starts moving, slowly but surely. still pretty slowly. weird, whatever, then BAM, it starts rising more and more. temp gauge got to about 210-215 before i shut it off.
could the tstat have been stuck shut from not being used for a few weeks? i pulled it and put on new rtv to the tstat housing and im gonna try running it without a tstat to have full-time 100% water pump flow.
any ideas? think it was just a tstat? im really hoping so, and i don't understand how it (seemingly) worked fine before the whole incident of forgetting the gasket

you sure it didnt just have an air bubble? if the coolant sensor isnt in water, the temp goes right to H
that's exactly what my buddy said; he thinks it's just air in the system that i need to work out.
so i'm going ot do two things tonite...first, change the tstat housing back to the normal tstat housing, not the one that came with the new water pump (that one's for an automatic and has an extra hole). then tomorrow i'll squeeze the crap outta all the hoses trying to get the air out the lower rad hose is a flex hose so there's not much squeezing i can do since it's lined with a metal spring inside
oh, forgot to mention..there was a slight hesitation today when i started it up. throttle was jittery...?
