Here is a video of the engine starting up right after been shut off. It fires up but seems to be choking or something. Notice how when the oil pressure reaches around the 4 mark the engine smoothes out and idles properly, could it be oil pressure?

That looks/sounds more like slow reaction time from electronics, or running a little too rich. The oil pressure reacts in that manner becasue its already warm. When cold the oil has reverted back to its "cold" 10w-XX form which makes it harder to pump, hence little or no reaction from the guage.

I concur!

Hot restart, rich mixture.

hm.. i started the engine cold today and quickly shut it off then restarted it while it was still cold and it started perfectly fine... only when the engine is in running temperatues does it start bad. So it couldn't be the restart?
