Removing Inside Metal Panels

I've got my interior and exterior practically to bare metal and I want to remove some of the metal panels to get and rust underneath. All the layers of metal seem to be spot-welded or heat-pressed or something, and I was wondering the best way to undo these to pull the panel off?

Should I just grind them away and weld them back when I replace the panel later?

Or drill them out?

Does anyone have experience with removing the layers of metal panelling?

its all sopt welded together so you need to drill out the spot welds, its not a very fun way to spend a day
