Hagis! a Gaelic staple. take everything you find on the floor and stuff it into some intestines cook and enjoy.
Souse! a southern tradition. take all the leftover pig parts and make them into a sausage type thing that is square shaped. and eat as you please.
when i hear of people eatign things like scrapple, halpukies, hagis, and souse it makes me wonder why we all don't eat more

WEll basically scrapple is *** if you think about it. Scrapple is as the name implies - scrap. Scrap parts of pig all mixed together kind of like sausage but with less "desireable" meat (organ meat also if I'm not mistaken). Its really salty and if nobody told you what it is before you ate it you might like it.
