Food that's in open air is up for grabs. Seriously though, get some "older" Granny Smiths if you don't like sour or Golden Delicious, I like the consitency of those.

Braburn and Gala apples are the best, most flavorful. In these kinds you can tell if there grainy by how firm they are. They should be firm so if you firmly press it dosn't make and impression but you can feel a little give means that they are ripe and not grainy if they push in a bit - slightly soft then they are grainy.
