Well to understand how the food gets cooked you must first understand how the microwave works. It cooks food from the inside to the outside. which would explain the first couple bites at first being warm.
Microwaves cook by exciting the molecules of the food, and the ones closer to th eoutside get excited first. The thinnest part cooks the fastest because it has more surface area for its mass than the thicker parts.
