Power Steering Gone
ok cool. When you say it won't stand up to it, what do you mean. Will it just suddenly break becuase there seems to be a lot of people who have taken out their power steering and i have not heard any of them say anything.
The pinion on a powered rack has 2 seperate halves joined with some form of torque sensing part which is usually flexible to cut down on the pump hunting back and forward for small inputs. This is the bit that would stress and fail - you could possibly sort it by getting a manual rack pinion if it's compatible or by welding the 2 halves together.

The S5 NA's RPM sensing PS sucks even when it's working.
The S4's and all the turbos have the speed sensing arrangement that's worth fixing.
Using the PS rack wthout the pump is not normally a safety issue.
The servo has a hard stop.
The only issue is keeping the internals clean & lubed by looping the lines and not just leaving them open.
