its basically the trim level. the base and se are the same, and have nothing. the gxl has everything (ac,pw,ps,rear wiper,etc). the sport, gtu and gtus's are the non turbo performance cars, they have the better seats, and big brakes. the turbos are like the gxl, but have a turbo. basically

if it's still got a rotary under the hood it's worth getting.
just cause it doesnt have all the features like power windows, sunroof, comfortable seats and a/c doesnt mean it's not an rx-7. IT"S STILL AN RX-7... and if it means one more back on the road, than get it.
be warned, their like women.. take care of them, and they will take car of you.

There are also some differences in the gear boxes and differentials. For instance the GXL comes with an LSD. The GTU I believe has the 4.30 rear where the others have 4.10. Someone can correct me, please, if I am wrong.
By the way, an 87 GXL comes in at over 3100 pounds, the vert may be heavier than 3K. My 87 GXL is listed at 3175 lbs.
