After determining it's hard to get a muffler shop to replace the cats for me, I was wondering what's involved in gutting the cats. Or is it worth it to just try harder to find someone to do it for me?

if you take them off, the first 2 are prolly hollow already, so you just fish the pieces out of the main cat and your good to go

You can use whatever you have to ram into the converter to break up that honeycomb ****, then just keep shaking and fishing the pieces out. Long screwdriver or pry bar works good to hammer in there.
