I read of people removing the rat's nest.

What is it?

What does it do?

pros and cons or removal?

ease of removal?

shoe size?

I thought it had something to do with emissions, which I have no concern for with this car.

Rats nest is the removal off all wiring and solenoids associated with emissions and the twin scroll system.

actually the rats nest is just the clusterfuck of metal tubes, brackets, and solenoids which resides under your upper intake manifold. You can remove it easily if you eliminate your emissions junk. You can eliminate it without removing the connectors / wiring from the harness which relates to it, but it is cleaner if you remove the related wiring also.
